A urethane finish, usually applied to the beveled flooring, seals it and makes sure any dirt that might fall into the cracks will not stay there. And while it is true that dirt can find its way into these grooves more easily, the other side of that is the grooves can also be cleaned out easier than typical straight cut planks. You would clean this type of flooring just like most of the other hardwoods. Or you could use a vacuum and run it through the grooves where any dirt may be building up.
